What should I say to the truck driver after a Houston semi accident?

As little as possible, and here’s why:

Truckers have been trained by their companies on how to handle a Houston truck accident.  They are taught ways to "damage control" the situation so that everything they do will protect the company’s best interests.  This includes:

Attempting to confront you. By acting angry or upset over the accident, a trucker may make you question whether you played a part in the crash.  Don’t assume his anger is justified; stick to the facts and avoid apologizing—it can hurt your case later.

Trying to get you to admit fault. Even if the trucker is calm and even-tempered, he will still be trying to collect evidence against you.  If you are uncomfortable with the conversation, excuse yourself and return to your vehicle until police arrive.

Trying to get you to sign something. NEVER sign anything a truck driver gives you after a crash, even if he says it’s “just for the records” or “required” after a crash.  Your signature should never be required on any trucking company documents.  

The best thing to do after your truck accident is to not speak to the trucker at all.  Remain in your car until the police arrive, and then give a separate statement to police without the trucker present.
